Thai Basil Chicken Noodle Skillet

- 2 boneless, skinless chicken breasts, cut into 1-inch pieces
- 8 oz. uncooked linguine pasta, broken into 2-inch pieces
- 2 tbsp. olive oil
- 3 cloves of garlic, minced
- 1/2 onion, diced
- 1 red bell pepper, thinly sliced
- 1 cup snow peas
- 1 cup carrot, shredded or sliced
- 1 cup of chicken broth
- 3 tbsp. soy sauce
- 2 tbsp. fish sauce
- Juice from 1 lime
- 1/4 cup Thai basil leaves, torn
- Crushed red pepper flakes (optional)
Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 4-5 minutes, stirring occasionally, until browned on the outside. Transfer to a plate and set aside.
Add the garlic and onions to the skillet and cook for 1 minute until fragrant. Add the bell peppers, snow peas, and carrots. Cook for 2-3 minutes, stirring frequently.
Add the linguine, chicken broth, soy sauce, and fish sauce. Stir to combine. Cover and cook for 5 minutes, stirring occasionally.
Add the cooked chicken back to the skillet along with any accumulated juices. Continue cooking for 5 more minutes, stirring frequently, until the pasta is al dente.
Remove from the heat and stir in the lime juice and Thai basil. Season with red pepper flakes, if desired.
