Thai Basil Chicken Noodle Skillet

This quick and easy Thai basil chicken noodle skillet is loaded with flavor. Ready in just 25 minutes, this one-pan meal is perfect for busy weeknights.

Ingredients
  

  • 2 boneless, skinless chicken breasts, cut into 1-inch pieces
  • 8 oz. uncooked linguine pasta, broken into 2-inch pieces
  • 2 tbsp. olive oil
  • 3 cloves of garlic, minced
  • 1/2 onion, diced
  • 1 red bell pepper, thinly sliced
  • 1 cup snow peas
  • 1 cup carrot, shredded or sliced
  • 1 cup of chicken broth
  • 3 tbsp. soy sauce
  • 2 tbsp. fish sauce
  • Juice from 1 lime
  • 1/4 cup Thai basil leaves, torn
  • Crushed red pepper flakes (optional)

Instructions
 

  • Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 4-5 minutes, stirring occasionally, until browned on the outside. Transfer to a plate and set aside.
  • Add the garlic and onions to the skillet and cook for 1 minute until fragrant. Add the bell peppers, snow peas, and carrots. Cook for 2-3 minutes, stirring frequently.
  • Add the linguine, chicken broth, soy sauce, and fish sauce. Stir to combine. Cover and cook for 5 minutes, stirring occasionally.
  • Add the cooked chicken back to the skillet along with any accumulated juices. Continue cooking for 5 more minutes, stirring frequently, until the pasta is al dente.
  • Remove from the heat and stir in the lime juice and Thai basil. Season with red pepper flakes, if desired.

Notes

  • Use cooked rotisserie chicken to save time.
  • Adjust red pepper flakes to the desired spice level.
  • Garnish with lime wedges and extra basil.
