Ingredients
  

To make a BBQ Cowboy Casserole, you'll need the following ingredients:

  • 2 lbs. ground beef
  • 1/2 lb. bacon, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes, drained
  • 1 cup BBQ sauce
  • 1/2 cup beef broth
  • 1 tsp. chili powder
  • 1 tsp. cumin
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 4 cups cooked rice
  • 2 cups shredded cheddar cheese

Instructions
 

  • Preheat your oven to 375°F.
  • In a large skillet, cook the bacon over medium heat until crispy. Remove the bacon from the skillet and set it aside on a paper towel-lined plate.
  • In the same skillet, cook the ground beef, onion, and garlic over medium-high heat until the beef is browned and the onion is translucent.
  • Drain any excess fat from the skillet.
  • Add the black beans, corn, diced tomatoes, BBQ sauce, beef broth, chili powder, cumin, salt, and black pepper to the skillet. Stir to combine.
  • Bring the mixture to a simmer and cook for 5-10 minutes, until the sauce has thickened slightly.
  • In a large baking dish, layer the cooked rice, beef mixture, and shredded cheese.
  • Repeat the layers until all of the ingredients are used up, ending with a layer of cheese on top.
  • Bake in the preheated oven for 20-25 minutes, until the cheese is melted and bubbly.
  • Remove from the oven and let the casserole cool for a few minutes before serving.

Notes

  • This recipe can be easily customized by adding or substituting ingredients. For example, you could use ground turkey instead of ground beef, or add diced jalapeños for some extra heat.
