- 1 pound boneless, skinless chicken breasts, cooked and shredded
- 1 can (10 ounces) enchilada sauce
- 1 can (10 ounces) diced tomatoes with green chilies, drained
- 1 can (4 ounces) diced green chilies, drained
- 1 can (15 ounces) black beans, drained and rinsed
- 1 cup frozen corn kernels
- 1 teaspoon ground cumin
- 1/2 teaspoon garlic powder
- Salt and pepper, to taste
- 8-10 corn tortillas
- 2 cups shredded cheddar cheese
- 1/4 cup chopped fresh cilantro (optional)
Step 2: Prepare the sauce
In a large bowl, mix together the enchilada sauce, diced tomatoes with green chilies, and diced green chilies. Stir in the cooked chicken, black beans, frozen corn, cumin, garlic powder, salt, and pepper.
