Ingredients

For the cherries:

  • 3 cups of fresh pitted cherries
  • Unsalted butter (to be used as grease for the baking dish)
  • 1 ½ tablespoon of granulated sugar

For the clafoutis batter:

  • 3 eggs
  • ½ cup of granulated sugar
  • ½ cup of all-purpose flour
  • 2 tablespoons of melted unsalted butter
  • 1 teaspoon of vanilla extract
  • 1 cup of milk
  • Pinch of salt

Optional:

  • Powdered sugar for dusting

Instructions

  • Grease a 9-inch round baking dish with unsalted butter. Sprinkle the granulated sugar and set it aside.
  • Start cleaning the cherries by removing their stems and pits.
  • The first layer above the sprinkled sugar should be the cherries. Place them evenly in the baking dish.
  • Beat the eggs in a bowl, add the vanilla extract, salt, and sugar. Beat until they form a smooth consistency.
  • Add in the melted butter, followed by the milk and mix well.
  • Pour the smooth batter gradually on the cherries in the baking dish. Spread the batter evenly.
  • Transfer the baking dish to a preheated oven at 350°F degree. Bake till it’s golden brown. It should take about 45 minutes.
  • After removing it from the oven, leave it to rest for at least 30 minutes.
  • Sprinkle some powdered sugar on top. Serve and enjoy!
