Pesto Grilled Cheese Sandwich

A flavorful twist on traditional grilled cheese, this pesto grilled cheese recipe is made with basil pesto, melted cheese, and crusty bread for a satisfying sandwich.

Ingredients
  

  • 4 slices of your favorite bread
  • 2 tablespoons of butter, softened
  • 4 tablespoons of basil pesto
  • 8 slices of mozzarella cheese
  • A pinch of salt and pepper

Instructions
 

  • Butter the bread: Spread butter or oil on one side of 4 bread slices. This helps them brown evenly in the pan.
  • Assemble the sandwiches: On 2 of the bread slices, spread a layer of pesto. Top the pesto with cheese slices or shredded cheese. Place the 2 remaining bread slices on top, buttered side up.
  • Cook the sandwiches: Heat a skillet over medium heat. Place the pesto-grilled cheese sandwiches in the pan. Grill for 3 minutes on the first side until golden brown. Flip and grill for 3 more minutes on the second side.
  • Slice and serve: Remove the sandwiches from the pan and slice diagonally. Enjoy immediately while the cheese is still gooey.

Notes

  • Make sure to let the pesto come to room temperature so it can spread evenly on the bread.
  • If using basil pesto, look for a variety with pine nuts or walnuts to add texture.
  • Freshly grated parmesan or mozzarella can be added on top of the sandwiches right before grilling for extra flavor.
  • If you want an extra punch of pesto, spread some on the insides of the top slices too.
  • Sourdough bread tends to make the crispiest grilled cheese.
  • Leftover pesto grilled cheese sandwiches can be wrapped in foil and reheated in a 350°F oven for 10 minutes.
