Ingredients
  

  • 1 lb. lean ground beef
  • 1 onion, chopped
  • 1 can (14.5 oz.) diced tomatoes, undrained
  • 1 can (15 oz.) black beans, rinsed and drained
  • 1 can (8.75 oz.) corn, drained
  • 1 can (10 oz.) enchilada sauce
  • 1 package (8 oz.) shredded cheddar cheese
  • 1 package (8 oz.) shredded mozzarella cheese
  • 1 tsp. chili powder
  • 1 tsp. garlic powder
  • Salt and pepper to taste
  • 1 tbsp. olive oil

Instructions
 

  • Preheat your oven to 375°F.
  • In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until soft and translucent.
  • Add the ground beef to the skillet and cook until browned, stirring occasionally.
  • Drain any excess fat from the skillet and add the diced tomatoes, black beans, corn, chili powdergarlic powder, salt, and pepper. Mix well and cook for 5-10 minutes.
  • Add the enchilada sauce to the skillet and stir until well combined.
  • Transfer the mixture to a 9x13 inch baking dish.
  • Sprinkle the shredded cheddar cheese and mozzarella cheese on top of the mixture.
  • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  • Let the casserole cool for a few minutes before serving.
