- 1 lb. lean ground beef
- 1 onion, chopped
- 1 can (14.5 oz.) diced tomatoes, undrained
- 1 can (15 oz.) black beans, rinsed and drained
- 1 can (8.75 oz.) corn, drained
- 1 can (10 oz.) enchilada sauce
- 1 package (8 oz.) shredded cheddar cheese
- 1 package (8 oz.) shredded mozzarella cheese
- 1 tsp. chili powder
- 1 tsp. garlic powder
- Salt and pepper to taste
- 1 tbsp. olive oil
Preheat your oven to 375°F.
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until soft and translucent. Add the ground beef to the skillet and cook until browned, stirring occasionally.
Drain any excess fat from the skillet and add the diced tomatoes, black beans, corn, chili powder, garlic powder, salt, and pepper. Mix well and cook for 5-10 minutes. Add the enchilada sauce to the skillet and stir until well combined. Transfer the mixture to a 9x13 inch baking dish.
Sprinkle the shredded cheddar cheese and mozzarella cheese on top of the mixture. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
Let the casserole cool for a few minutes before serving.
