Ingredients
  

  • 2 cans of black beans, drained and rinsed
  • 2 cans of diced tomatoes
  • 1 can of corn, drained
  • 1 red onion, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 3 cloves of garlic, minced
  • 1 tablespoon of chili powder
  • 1 tablespoon of cumin
  • 1 tablespoon of paprika
  • Salt and pepper to taste
  • 2 cups of shredded cheddar cheese
  • 1/4 cup of chopped fresh cilantro

Instructions
 

  • Preheat your oven to 375°F.
  • In a large bowl, mix together the black beans, diced tomatoes, corn, red onion, red and green bell peppers, garlic, chili powder, cumin, paprika, salt, and pepper.
  • Transfer the mixture to a 9x13 inch baking dish and smooth it out into an even layer.
  • Sprinkle the shredded cheddar cheese on top of the mixture.
  • Cover the dish with foil and bake for 30 minutes.
  • Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  • Garnish with chopped cilantro and serve hot.
