- 2 cans of black beans, drained and rinsed
- 2 cans of diced tomatoes
- 1 can of corn, drained
- 1 red onion, diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 3 cloves of garlic, minced
- 1 tablespoon of chili powder
- 1 tablespoon of cumin
- 1 tablespoon of paprika
- Salt and pepper to taste
- 2 cups of shredded cheddar cheese
- 1/4 cup of chopped fresh cilantro
Preheat your oven to 375°F.
In a large bowl, mix together the black beans, diced tomatoes, corn, red onion, red and green bell peppers, garlic, chili powder, cumin, paprika, salt, and pepper. Transfer the mixture to a 9x13 inch baking dish and smooth it out into an even layer.
Sprinkle the shredded cheddar cheese on top of the mixture.
Cover the dish with foil and bake for 30 minutes.
Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
Garnish with chopped cilantro and serve hot.
