Our simple banana coconut milk smoothie is made up of just four ingredients: creamy banana, slightly sweet coconut milk, tangy kiwi, and fresh spinach leaves. It is the perfect balance of delicious taste, filling consistency, and most importantly is super healthy!
Spinach is a wonderful vegan ingredient; it is fueled with iron which can sometimes be missed in a plant-based diet, yet smoothies are a great way of packing it in.
If preferred, you can swap the coconut milk for your favorite dairy-free milk, or even use coconut water. The below recipe makes for two portions, you can always blitz it up and store half in the fridge for the following day.
Banana Coconut Smoothie Recipe
- 1 kiwi
- 1 banana
- 260ml pure coconut water
- 2 ice cubes
- Peel the kiwi and banana then add to the blender.
- Next add the coconut milk and spinach leaves and blitz for 30 seconds until smooth and enjoy!
