The prospect of reviewing a newly published cookbook brings me so much joy, yes I know I am a serious cookbook geek. So I was absolutely thrilled when the new Abel & Cole cookbook, How to Eat Brilliantly Every Day (published by Penguin Random House, RRP £18.99) landed on my door mat.
I’m sure you’ve heard of Abel & Cole, they’re well known for delivering organic veg boxes to your door. They also provide a range of sustainable meat and fish boxes, as well as recipe boxes too. This new Abel & Cole cookbook provides lots of clever inspiration to include organic fruit and vegetables in your diet throughout the all the seasons.
Although I’m not keen in the cooler autumnal weather, I absolutely love the abundance of vegetables that come into season now. With homemade soup always high on my cooking agenda, I decided that the Squash & Tahini Soup with Pomegranate would be the recipe to try. It’s a velvety smooth soup, with those pomegranate seeds providing little pops of sweetness to contrast the earthiness of the cumin flavoured squash. It is an absolute pleasure to eat with crusty bread.
